Towering over the island in peach, ochre and parchment, the dramatic Dalt Vila reflects the colours of the Ibiza’s sunsets. It offers visitors something different depending on the clock, so can be enjoyed at any time depending on your partying/beaching/siesta routine. Rise early, ready for the nuns to open the cathedral at 10am, then stroll down into the daily market to grab prime pickings of fresh fruit. Or, visit in the afternoon sun when the colours are at their brightest and get some sangria to match from L’Escalinata and tapas from Plaza Del Sol. Alternatively, the old streets offer the perfect setting for a late romantic dinner (see La Olivia below), just make sure you book in advance unless you’re eating before 10pm. Stop off at Barocco after for the best gelato the walls offer. Whenever you go, make sure you wear good shoes, so you can get fully lost in its floral back streets in comfort.
