Recipe: Oat and Raisin Cookies


these cookies make for a great sweet treat or on- the- go breakfast. They are packed with nourishing ingredients to keep you feeling full of oaty energy! cinamon adds a lovely warm flavour, but also has secret super powers. it helps control blood sugar levels by lowering the bodies’ resistance to insulin. so effectively, making it easier for insulin hormone to take glucose from the blood and use it for energy. i add chia and flax seeds to these for extra fibre and protein, but both are optional. they’re delicious spread with nut butter- I like ‘Whole Earth smooth peanut’.


  • 2tbsp coconut oil
  • 1/2 cup honey (or maple syrup, agave)
  • 1 cup oats
  • 3/4 cup wholemeal flour (or gf such as buckwheat, brown rice)
  • 1tsp baking powder
  • 1-2 tsp cinnamon
  • 1/2 cup raisins
  • 1 free range egg, whisked


  • preheat oven to 170c
  • gently melt coconut oil and honey until smooth, either in a pan or in the microwave (put a plate over for the latter to prevent mess!)
  • mix all the dry ingredients in  big bow until incorporated
  • stir the egg and honey mixture into the dry ingredients, you may need to add water to reach a sticky consistency, a bit thinner than a normal dough
  • spoon tablespoons of the mixture onto a prepared baking sheet and flatten a little
  • bake for 10-14  minutes until golden brown, cool on a wire rack for 5 minutes before serving
